Pancake Batter

1 cup Flour
3 Tbsp Sugar
2 Tbsp Baking Powder
1/4 tsp Salt
1 cup Milk
1 Egg
2 Tbsp Cooking Oil

Mix dry ingredients, Flour, Sugar, Baking Powder and Salt. Create a well in the center. Add the Milk, Egg and Oil and stir smooth. Let set for 2-3 minutes. Prepare hot griddle or pan with butter. Pour 2 Tablespoons of batter onto griddle and smooth out with spoon.

Gooseberry Pie

3 1/2 c Gooseberries
2 tb Tapioca - minute
1 1/2 c Sugar
1/4 ts Salt
1 ts Orange - grated rind of
2 tb Butter - melted

Mix together and let stand 15 minutes. Line 9-inch pastry tin with pastry, add fruit mixture, cover, slit in several spots to allow steam to escape. Bake in hot oven, 450 F. 15 minutes and decrease to moderate, 350 F. and bake 30 minutes longer.

Sloppy Joe's
1 lb Hamburger
1/2 cup Chopped Onion
1/2 cup chopped Green Peppers
1 Tbsp Cooking Oil
1 Tbsp Mustard (prepared)
1 cup Catsup
1 tsp Salt
1/4 tsp Pepper

Chili
2 cloves Garlic (crushed)
1 large Onion, chopped
2 Tbsp Cooking Oil
1 lbs. Ground Beef
2 Tbsp Chili Powder
2 14.5 oz can Stewed Tomatoes
2 15.5 oz can Red Kidney Beans

Baked Beans
2 Tbsp Brown Sugar
1 tsp Dried Mustard
1 cup Catsup
2 cans Pork-n-beans (15 oz cans)
1 can Kidney Beans (15.5 oz cans)
5 strips Bacon
1/2 cup Green Pepper (Chopped)
1 cup Onion (chopped)
1/2 tsp Garlic Powder

Creamy Potato Soup
2/3 cup    Butter
2/3 cup    Flour
8 cups     Milk (1/2 Gallon)
6-7 cups   Potatoes (6 large)
1 stalk    Celery (thinly sliced)
1 small or 4 Green onions  thinly sliced
1 lb       Bacon or 1 lb of sausage crumbled
1 cup      Shedded mild Chedder Cheese
1 cup      Sour Cream (8 oz.)
3/4 tsp    Salt
1/2 tsp    Pepper

Stuffed Peppers
4 Lg Bell Peppers
1 lbs Ground Beef
1 1/2 cups Cooked Rice
1 (26 oz) can Spaghetti Sauce
1 Tbsp Worcestershire Sauce
1/4 tsp Garlic Powder
1 tsp Italian-style Seasoning
1 (16 oz) Jar Salsa
