Creamy Potato Soup
2/3 cup Butter
2/3 cup Flour
8 cups Milk (1/2 Gallon)
6-7 cups Potatoes (6 large)
1 stalk Celery (thinly sliced)
1 small or 4 Green onions thinly sliced
1 lb Bacon or 1 lb of sausage crumbled
1 cup Shedded mild Chedder Cheese
1 cup Sour Cream (8 oz.)
3/4 tsp Salt
1/2 tsp Pepper
Cook and drain bacon or suasage and crumble. Cook potatoes peal and cube. Melt butter over low heat in large pan. Stir flour in until smooth. Gradually add Milk stirring until sauce thickens. Add potatoes, Onions and celery. Bring to boil stirring constantly. Reduce heat to simmer for 10 minutes. Add bacon, cheese, cream, salt and pepper... stirring until cheese has melted, and then serve hot.
