This batter process is called friendship cake for a reason. When it is ready for use it is to be divided up and shared with a friend. Or, if your friend doesn't wish to take the batter you can still share the cake. Each recipe makes two 9x12 loaves.

Basic Basic Starter Mix

If you do not have a cup of Basic Starter Mix you can start your own. To make your basic batter you start with:

1 cup Flour

1 cup Sugar

1 cup Milk

Place it in a jar or zip lock plastic bag. We use a gallon jar, but a 2-quart jar would work well. Never use a metal spoon or bowel in mixing the ingredients during this process and do not refrigerate. It is normal for the batter to thicken, ferment and bubble during this process. Your basic Basic Starter Mix comes from a 10 day process.

Day 1: This is the day you receive the Basic Starter Mix. Do Nothing.

Day 2: Stir the batter

Day 3: Stir the batter

Day 4: Stir the batter

Day 5: Stir the batter

Day 6: Add 1 cup Flour, 1 cup Sugar and 1 cup Milk

Day 7: Stir the batter

Day 8: Stir the batter

Day 9: Stir the batter

Day 10: Combine in a large bowl the batter and 1 cup Flour, 1 cup Sugar and 1 cup Milk.

After the mix is ready to divide and make the bread, cake or cookies you can use metal utensils. But ONLY on the batter you are going to use, and NEVER on the Basic Starter Mix.

Mix the Basic Starter Mix with a wooden spoon. Divide into 4 single cup starters. Keep one of these starters for yourself. The other three can be frozen in individual zip-lock plastic bags to be use at a later date. Give one to a friend along with these instructions to start their own Basic Starter Mix. These are the Basic Starter Mix that all the recipes call for.

Butternut Squash Bread

1 cup Basic Starter Mix

1/3 cup oil

3 eggs

1/2 tsp. salt

1 tsp. vanilla

1 tsp. cinnamon

1 cup brown sugar

2 cups flour

1 1/4 tsp. baking powder

1/2 tsp. baking soda

1 tsp. pumpkin pie spice

1 cup cooked butternut Squash (crushed)

Using a fork beat by hand until well blended. You can add 1 cup raisins and 1 cup nuts (optional). Grease two loaf pans with butter, sprinkle with sugar instead of flour. Bake at 325 degrees F for 45 minutes to 1 hour (individual oven temperatures vary). Cool 10 minutes, remove from pans.

Pumpkin Spice Bread

1 cup Basic Starter Mix

1/3 cup oil

3 eggs

1/2 tsp. salt

1 tsp. vanilla

1 tsp. cinnamon

1 cup brown sugar

2 cups flour

1 1/4 tsp. baking powder

1/2 tsp. baking soda

1 tsp. pumpkin pie spice

1 cup canned pumpkin

Using a fork beat by hand until well blended. You can add 1 cup raisins and 1 cup nuts (optional). Grease two loaf pans with butter, sprinkle with sugar instead of flour. Bake at 325 degrees F for 45 minutes to 1 hour (individual oven temperatures vary). Cool 10 minutes, remove from pans.

Basic Cake Recipe 1

1 cup Basic Starter Mix

Pour into 2 well greased and Floured or Sugar and Cinnamon), 9x12 loaf pans. You can sprinkle extra Cinnamon and Sugar on top. Bake at 350 degrees for 40-45 minutes. let stand for five minutes before turning out of pan.

Basic Cake Recipe 2

1 cup Basic Starter Mix

1 cup Oil

1/2 cup Milk

1 teaspoon Vanilla

In a separate bowl combine the following dry ingredients and mix well:

2 cups Flour

1 cup Sugar

1-1/2 teaspoon Baking Powder

2 teaspoon Cinnamon

1/2 teaspoon Baking Soda

1 - (5.1 oz) box instant Vanilla pudding

1/2 teaspoon Salt

1 cup nuts

Add dry ingredients to wet ingredients. Mix and pour into two well greased and Sugared bread pans. Bake at 325 degrees for 1 hour.

Apple Bread

1-1/2 cup Sugar

3/4 cup Oil

1 teaspoon Vanilla

2 cup Flour

2 teaspoon Cinnamon

2 Eggs

1 cup Basic Starter Mix

1/2 teaspoon Baking Soda

1 teaspoon Salt

Fold in by hand:

1 cup chopped nuts

3 cup diced fresh apples

Pour into 2 well greased loaf pans. Bake at 375 degrees F 50-60 minutes.

Chocolate Brownies

In a bowl, combine and mix well:

1 cup Oil

1/2 cup Milk

3 Eggs

1 teaspoon Vanilla

1 cup Basic Starter Mix

In a separate bowl combine the following dry ingredients and mix well:

2 cup Flour

1- 1/2 cup Sugar

1-1/2 teaspoon Baking Powder

1/2 teaspoon Baking Soda

1 - (5.1 oz) box instant chocolate pudding

3 heaping teaspoon of Cocoa

1/2 teaspoon Salt

1 cup pecans or walnuts

Add dry ingredients to wet ingredients. Mix and pour into two well greased and sugared bread pans. Bake at 325 degrees for 1 hour.

Chocolate Cake 3

Cream:

2/3 cup shortening

1- 2/3 cup Sugar

Add:

3 Eggs

1 cup Basic Starter Mix

1 teaspoon Vanilla

Beat 2 minutes on medium speed.

Combine:

2/3 cup Cocoa

1-1/2 teaspoon Baking Soda

1 teaspoon Salt

2 cup Flour

1/2 teaspoon Baking Powder

Add Flour mixture to batter alternately with 3/4 cup cold water. Beat 1 minute on medium speed. Mix in by hand 1cup chopped nuts. Pour into greased and Floured 9x12 pans. Bake at 375 degrees F for 30-40 minutes.

Chocolate Chip Applesauce Cookies

Combine in small bowl and set aside.

1-1/2 cup Applesauce

3 teaspoon Baking Soda

Cream together:

3/4 cup Brown Sugar

Add:

3/4 cup Sugar

1 teaspoon Vanilla

1 cup shortening

1 cup Basic Starter Mix

1 Egg

Beat 2 minutes on medium speed. Add Applesauce mix alternately with 4 1/2 C. Flour and 1 teaspoon Baking Powder. Mix until well blended. Fold in 2 cups (12 oz.) of chocolate chips. Drop batter on cookie sheet. Bake at 350 degrees F for 8-10 minutes.

Cornbread

1 cup Basic Starter Mix

2 Eggs

1-1/2 cup Milk

2 teaspoon Sugar

1/2 cup Flour

1-1/2 cup cornmeal

Combine in large bowl. Beat at medium speed for 2 minutes.

Add:

1/4 cup Oil

3/4 teaspoon Baking Soda

1/2 teaspoon Salt

1 teaspoon Baking Powder

Mix well. Pour in well-greased 9" pan. Bake at 425 degrees 25-30 minutes.

Muffins

1 cup Basic Starter Mix

2 cup Flour

3/4 cup Oil

1 teaspoon Baking Soda

2 teaspoon Baking Powder

1 cup Sugar

3 Eggs

1-1/2 teaspoon Cinnamon

2 teaspoon Vanilla

Stir Well.

Add:

1 cup nuts, chopped

OPTIONAL

1 cup apples, chopped

1 cup raisins, or

1 cup blueberries

Mix Well. Put into muffin tins well greased if not using liners. Sprinkle with topping on each muffin and bake at 350 degrees for 15-20 minutes or until done.

TOPPING:

1 cup Brown Sugar

½ cup Flour

¼ cup margarine

Mix well and sprinkle over tops of muffins before baking.

Pancakes & Waffles

Pancakes

Combine in large bowl:

1 cup Flour

½ teaspoon Salt

1 teaspoon Baking Powder

1 teaspoon Baking Soda

Combine in smaller bowl:

2 teaspoon Oil

2 cup Basic Starter Mix

½ cup Milk (plus/minus ¼ c)

1 Egg

Add ingredients of smaller bowl to ingredients of large bowl and mix on medium speed. Spoon the batter onto greased griddle.

Waffles

Prepare batter for pancakes except increase Oil to 1/4 cup.

Cinnamon Rolls

2 cup Flour

1 cup Milk

1 cup Basic Starter Mix

Combine and let set at room

temperature overnight or 10-12 hours.

Stir down.

Combine:

3 teaspoon Sugar

1 Egg

1/2 cup shortening

1 teaspoon Salt

1/2 teaspoon Baking Soda

1 teaspoon Baking Powder

Add into small bowl all at once to stir down. Pour dough out on well-Floured board. Knead until no longer sticky. Roll out to 1/2" thickness in a rectangle shape. Brush dough with soft butter.

Combine:

1/4 cup Sugar

1 teaspoon Cinnamon

1/2 cup crushed nuts

Sprinkle Cinnamon-Sugar mixture over dough. Beginning at wide side, roll up, and seal seam. Cut 1" slices. Place on well-greased cookie sheet. Let rise 30 minutes. Bake at 350 degrees F 30-35 minutes.

Carrot Coconut

Add to the basic bread recipe the following ingredients:

1 cup Basic Starter Mix

3 medium carrots shredded

1/2 cup raisins

1/2 cup chunky style Applesauce

1/2 cup coconut

1 teaspoon Cinnamon

1 teaspoon nutmeg

1/2 teaspoon clove

1/2 cup chopped walnuts

Bake it in a bunt pan until a wooden toothpick comes out clean. When cool, frost with cream cheese frosting.

Rhubarb Muffins

1 cup Basic Starter Mix

1 1/2 cup Rhubarb (finely chopped)

Fill muffin tins 2/3 full. Add 1 teaspoon of the following topping: 1/2 cup Brown Sugar, 1/2 cup chopped nuts and 1 teaspoon Cinnamon. Bake at 325 degrees for 20 minutes.

1 cup Basic Starter Mix

2 Eggs

1 teaspoon molasses

3/4 cup butter

2 teaspoon Vanilla

Mix well. Sift together:

2 cup Flour

1 cup Sugar

1 teaspoon Salt.

Chocolate Chip Option: Add

1 cup Flour

2 cup chocolate chips

1 cup nuts (optional)

Oatmeal Option: Add

2 cup oatmeal,

1 teaspoon nutmeg,

2 teaspoon Cinnamon,

1 cup chocolate chips

1 cup raisins

Bake at 375 for 10 to 13 minutes.

Sourdough-Style Biscuits

Dry Ingredients:

3-3/4 cup Flour

1-1/2 teaspoon Salt

2 teaspoon Baking Powder

2 teaspoon Baking Soda

1 stick (1/2 cup) plus 1 Tablespoon Oleo/margarine

Blend dry ingredients with oleo until the oleo is well cut in.

Add:

3/4 cup Milk or Buttermilk

1-1/2 cup Basic Starter Mix

Knead, roll, and cut. Place on greased baking sheet. Bake at 375 degrees F for 20 to 30 minutes. Makes 1-1/2 dozen

Sourdough Bread

1 cup Sugar

1/2 cup Oil

1 teaspoon Salt

1 - 1/2 cup warm water

1 cup Basic Starter Mix

6 cup bread Flour

Mix all ingredients thoroughly. Oil bottom & sides of large bowl & put bread dough in. Let dough stand overnight at room temperature. In morning, punch dough down 4-5 times and divide into 3 equal balls. Kneed each ball 8-10 times and put into 3 greased and Floured loaf pans. Brush tops with Oil and cover with Oiled foil. Let stand 4-5 hours or all day. (If dough has not risen well, put small pan of water on bottom rack in oven, heat to 200 degrees, and turn off oven. Put dough on top rack for 1-2 hours.) Bake at 350 degrees for 30-40 minutes. (Cover with foil after lightly browned.)

Biscuits

1 cup Flour

½ teaspoon Baking Soda

½ teaspoon Salt

2 teaspoon Baking Powder

Combine all above ingredients in a large bowl. With spoon, make well (dent) in center.

Combine:

2 Eggs

1 cup Basic Starter Mix

1/4 cup Oil

Beat 2 minutes on medium speed. Pour Egg mixture into Flour mixture all at once. Stir and add additional Flour a tablespoon at a time until dough cleans sides of bowl. Pour on Floured board. Roll 1/2" thick. Cut out biscuit using circle cutter. Place biscuits close together on greased cookie sheet. Brush tops of biscuits with melted butter. Cover, let rise in warm place for 30 minutes. Bake at 350 degrees F for 15-20 minutes.

Chocolate Covered Cherries

2 cups Flour

1 cup Sugar

2 teaspoon Baking Powder

1 teaspoon Cinnamon

1/2 teaspoon Baking Soda

1/2 teaspoon Salt

1 small box Cherry Jell-O

1/2 cup mini-chocolate chips

In a separate bowl combine the following dry ingredients and mix well.

1 cup Starter Batter

2/3 cup Oil

1/4 cup Milk

1 teaspoon Maraschino Cherry Juice

3 Eggs

1/2 cup Maraschino Cherries

Add dry ingredients to wet ingredients. Pour into 2 well greased and floured, 9x12 loaf pans. Bake at 350 degrees for 1 hour.

2 cups Flour

1 cup Sugar

2 teaspoon Baking Powder

1/2 teaspoon Baking Soda

1/2 teaspoon Salt

1 Large box instant Cheesecake Pudding (or 2 - small)

In a separate bowl combine the following dry ingredients and mix well.

1 cup Starter Batter

2/3 cup Oil

1/2 cup Milk

1 teaspoon Vanilla

3 Eggs

1 small package Cream Cheese

1 can Cherry Pie Filling (for dabbing)

Add dry ingredients to wet ingredients (except for the Cherry Pie Filling). After putting the batter into well greased and floured, 9x12 loaf pans dab teaspoons of Cherries on top of them and swirl around with spoon to mix in the Cherries. Bake at 325 degrees for 45 minutes to 1 hour.

1 cup Zucchini (grated)

Squeeze any excess liquid from Zucchini and add Zucchini to the wet ingredients. Add dry ingredients to wet ingredients. Pour into 2 well greased and Floured, 9x12 loaf pans. Bake at 350 degrees for 1 hour.
